Welsh Eggs (vegetarian)

    If you've got so many leeks you've pulled before they bolt and don't know what to do with them all, you might like to try this recipe. This is the one we've used ever since the demise of the original Sosmix and substitution with that vastly inferior Granose/Granovita stuff with not only a changed recipe that tastes awfull, but also no longer vegan (not that vegans would be using it to make 'scotch' eggs!).

    6 hard boiled eggs
    Flour seasoned with salt & paprika
    1 chopped leek
    10ml/2 tsp sunflower oil
    115g/4 ozs white breadcrumbs
    50g/2 ozs vegetarian suet
    60ml/ 4 tbsp chopped parsley
    5ml/1 tsp dried thyme
    salt & ground black pepper
    1 beaten egg
    small amount of lemon juice
    75g/3 ozs dried (we get them golden in the oven) breadcrumbs

    Toss shelled hardboiled eggs in seasoned flour. Fry leeks in oil for few mins, cool and mix with white breadcrumbs, suet, herbs & seasoning, adding a squirt of lemon juice (don't overdo it unless you like things lemony) and a little water if mix is too dry. Shape mixture around boiled eggs, coat in egg and golden breadcrumbs and leave to chill for 30 mins. Fry at 190C/375F for 3 mins and drain on paper towel. Serve when cool.

    This uses our own leeks, herbs, homemade breadcrumbs from our own bread and eggs from our hens.

    It can be made by substituting enough large spring onions for the leek.

    Excuse the messy cutting in the pic, but I was keen to get at them.

    P.S. Another vegetarian recipe for using up all those leeks pulled this time of year is 'Glamorgan Sausages' and these get frozen for later use.

    I'm sure i've had something simliar to sosmix recently, unless that was old stock.

    Could always make something up with oats, soya mince & veg suet I suppose. Like we used to before sosmix & supermarket vege stuff.

    Do you remember Jumbo Grills ? Girt lumps of soya that had to be marinaded for 4 days before cooking. Used to love those.

    Looked like something for re-soling boots, but after soaking ideal for vegetarian kebabs on the BBQ as there was no chance of them falling off unlike Sosmix. Another product that's disappeared with nothing to replace it.

    Same recipe, but without the eggs inside. I found an old burger maker at South Molton Recycle in Devon whilst on holiday a couple of weeks ago, and tried it out on above recipe. Next version will have a fried (one of our own free-range) egg on top + a slice of cheese + home made mayonnaise + be in a bun.

      It's nice to know there are fellow veggies out there, enjoying experimenting with new versions of old favourites. Will definitely give your recipe a try.
