What Are You Eating Tonight?

    on a forum I often frequent, they have a thread titled 'What are you eating tonight?'

    works well with lots of interest, as loads of recipes are shared

    I'm cooking tonight (I cook on fridays and BBQ on saturdays) ... I have already started cooking (chicken is simmering):

    1 chicken cut into pieces (my village tesco were selling fairly large fresh chickens on 'special for £2.50 so could not resist)
    add salt/fresh ground black pepper and chicken spice (I use Robertsons chicken spice from south africa, but any chicken spice will do)

    fry in olive oil to brown

    then, add 1 large chopped onion, 6 cloves of crushed garlic, 1 small chilli chopped (seeds removed) ... 1 heaped tablespoon of dried oregano crushed in the palm of your hand .... keep frying for a while until onions have softened

    add passata (box of crushed tomato, or you can use 2 tins of tomato in tomato juice)

    1 large cup of water .... 1/2 cup of red wine and simmer for approx 1 1/2 hrs with the pot lid on, stirring occasionally

    serve with spagetti (I use the fresh one from Tesco), .... once the spagetti is cooked, add the chicken plus sauce to the spagetti pot after draining the spagetti ....

    after serving on plates, add extra ground black pepper and cover generously with grated parmesan cheese .... and serve with crusty oven baked garlic bread and an ice cold erdinger beer

    pud is a mars bar :o

    cheap, tasty and easy, but you will have 'garlic breath' for a couple of days

    have you tried spagetti with smooth peanut butter? .... sounds wierd, but tastes really good

    you need to add a few heaped tablespoons of peanut butter to the hot spagetti straight after it's been cooked/drained and mix well

    serve with loads of cheese and onion crisps and an ice cold coca cola

    (bachelor food) :D

    Red Pea Stew..
    1 can red kidney Beans
    1 can coconut milk
    1 onion chopped
    1/2 lb new potatoes scrubbed & cubed
    1/2 lb Butternut squash peeled de-seeded & cubed
    4 cloves garlic peeled & chopped
    1.tsp ground allspice
    1.tsp curry powder
    1 scotch bonnet chilli (chop it up if you like it hot or leave whole & remove before serving for mild)
    Salt & ground black pepper to taste.
    Sprig of fresh thyme
    Oil for frying

    Method.

    Heat the oil in a pan & fry the onion, potato & butternut until just starting to colour. Add the garlic & thyme & fry for 2 more mins stirring all the time..
    Add Allspice & curry powder & Scotch bonnet, fry for 2 mins more stirring all the time..

    Add rinsed & drained beans & coconut milk..
    Bring to the boil gently & simmer until potato is cooked through..
    Remove thyme & serve with rice & side dish of choice..

    Simple & quick.. :D

    Friday: Just going to carmelize some onions, saute green and red peppers, brown up some sausages, put all in a roll. And have a cold beer with it.

    Saturday is BBQ day, will get some steaks from local butcher.

    Sunday, have not a clue yet. Something will inspire me.

    Have some left over roasted chicken, will make chicken salad for sandwiches also.

    Have some beet roots, might cook them up and simmer pasta with the juices and put globbs of goat cheese on all.

    By the way love spagetti with just the cheese on it, have you tried a little truffle oil on it, yummy. Or throw spagetti in a skillet with a couple raw eggs, cook briefly.

      We had:

      Sausages and pan fried chipped potatoes, with a side order of oven baked haricot beans in a mild tomato sauce.

      I hope you'll extend that offer to me too, I've just bought my plane ticket. I do insist on a few mugs of tea as I work too though:)

      Sure Clueless, Tea and steaks for raking my leaves, good deal. come on over. Not until October/November. I've got a big grill for some really thick steaks.

      We had a Thai green curry at the local pub last night , lovely.
      Tonight is BBQ :bbq:
      Pork and leek sausages .Then hot garlic prawns - just fully cover prawns with olive oil add a couple of garlic cloves one or two diced chillies (jalapeno strength ) cover and slowly simmer on top shelf of the BBQ , eat with crusty bread to dip - yummy ! Then hopefully a rump steak with potato wedges. Several cans of cold beer and a glass of red wine :dbgrtmb:
