What's in your sandwich today?

    Or in your packed lunch....

    I had Spam yesterday - don't have that often.

    Usually it's Tuna & Sweetcorn.

    If I'm running late it's quick and easy to make Peanut Butter - yum!

    Sometimes thin ham & mustard.

    Occaisonally cheese & pickle.

    Usually I have a little bag of salad from the garden as well.

    Plus a couple of apples and bananas.

    I'm lucky enough to have lunch at home.
    Today was
    Homemade cucumber soup
    Homemade crusty bread
    Homemade mackerel pate and salad from the garden.

    I remember the days when lunch was - well what was lunch. Just another hour to work.

    Anybody want any of those recipes, sing out. Very quick and easy.

    I like the sound of the mackerel pate Alice.

    Mrs JWK made me tuna and sweetcorn sandwiches again (waiting for me in the fridge for tomorrow's lunch).

    Egg is a bit smellly snowbaby, I like it but it's not nice for my fellow workers! Like Strongy - I'd have it if I was working alone - :thumb:

    Thankfully I am a stay home mummy... my wee girl doesn't moan about stinky egg haha!

    Well today for my S in L I made Brie, grape, sweet pickle, lettuce & black pepper on Granary..

    Tomorrow will be cheese mix.. On Wholemeal Rye..
    Into a bowl grate enough tasty cheddar, finely chop a couple of thin strips of sweet pepper & a spring onion, add a teaspoon of favourite sweet pickle & mix together for your sandwich then top off with lettuce cue & tom with black pepper..

    Peanut fans (I'm one too) - have you tried making your own? It's incredibly simple and tastes so much better than the shop stuff.

    500g roasted peanuts (I buy the uber cheap ones from Sainsbury's) whizzed in a blender, then add groundnut oil a little at a time, until it starts to thicken (similar to making mayo). Depending on whether you like crunchy or smooth, keep blending until you get the right consistency. Taste and add a little salt if you prefer. I also add a spoonful of honey to add a tiny bit of sweetness.

    Here's the smoked mackerel pate JWK.
    Put the following in the food processor
    Quantities don't have to be exact

    4oz smoked mackerel fillets (skin removed) - about 2 small fillets
    7oz full fat cream cheese (small tub of Philly
    Zest of a lemon
    juice of 1/2 the lemon
    4 teasp horseradish cream (gives it that extra kick)
    Salt and pepper to taste.

    Pulse to combine it all together.
    Voila !

    Lovely with some crunchy lettuce for a sandwich
    or can be dressed up for the table. Good with roast beetroot.

    And should have said, if you're feeling flush you can use smoked salmon instead of mackerel.
    Or borlotti beans and some garlic - I like that one. But maybe not for work :oops:
