Winter vegetable soup

    Well, now the evenings are drawing in, what better way to warm up after a cold session in the garden?

    here's the recipe for the one I've just made, apologies for the roughness of it, I don't tend to measure out that much.

    1.5 L Chicken stock
    100g Pearl barley
    2-3 medium carrots
    1 Swede
    2 medium onions, or 1 large one
    2 parsnips
    2 Tbsp Tomato puree
    pepper to taste


    In a largeish saucepan heat up the stock, and add the barley. Let simmer for a while (think I left it about 15 mins ish)

    Chop the onions (or dice) then peel and chop all the veg into around 2cm cubes

    Put some water into another large saucepan, add the onions, bring to boil, then simmer for 5 mins

    Add remaining veg, and simmer for another 5 mins (ish)

    Add the Stock/Barley,and the tomato puree, bring back to boil, then simmer for 20-30 mins.

    Add pepper to taste, and serve with warm, crusty baguettes and butter.

    Sounds yummy, swanseadel. I made a leek and potato soup tonight although we are still warm. Soups are eaten all year round here.

    Thank you for that.

    I love soups LoL, though some of mine cross the boundary into stew ;)Just noticed too, missed out an ingredient, oops
