I plant about 12" apart which is more than enough. As said above chard is a bit sweeter than leaf beet. The leafy bits cook in next to no time. We fillet the leaves and cook the thicker central...

Opinion poll -Will my Aubergines pull through?
Awesome. I'm only guessing on the potting deeper - as the stems don't look as hairy as toms. So figured they're maybe not side-shooting. But I'll try a couple of each so we'll know for future!

As Kristen says, doing both would be the best bet.
I always plant at least two beans per cane. You can never have enough beans!!!

Can this be blight already?
I don't think it will be blight at this stage of the season, it looks more like Botrytis. You've done the right thing isolating it.
