It's quite normal for them to do that. When the leaves have all died back you can mulch around the plants but don't cover the crown.Although rhubarb leaves are poisonous to eat they are OK...

My Cauliflowers have gone limp overnight
you should have seen my others. Caterpillars got at my first batch and they was a mess. Thankfully I protected these ones much better from the butterflies
