I'd not bother trying to plant if they are shooting now, I agree with @Linz . Just eat them and buy new ones in the autumn, why yours are shooting now is a mystery to me

I just put them in water, try in one week I'll try planting them in potting soil witha bit of perlite and vermiculite and see what happens.

Cucumbers running rampent
mine are in my greenhouse, first time growing this year too and they have gone crazy, i found a fully grown cucumber the other day right at the bottom behind a leaf, didnt even notice it before....

Chives - one flowering a year?
Another way would be to lift your clump of chives this autumn, and divide it. I wouldn't do it now, because the plants are too stressed with the drought....
