Yes, a fan oven would work but I think it would take more than a couple of hours- you want to dry not cook- depending on size of slices. I have a dehydrator [fancy gadget!] which is great for drying herbs, fruit etc but some things take overnight.

Did you give it good prepearation before planting? Big hole, good bit of blood and bone meal and a nice bit of sh1t (well rotted) nicely mixed in.They are very slow, you could try feeding it.
