To go back to anthea's recipe for ratatouille. When I make it I usually make up a double portion as it freezes very well. I also prefer to eat it cold as a salad.

Amanda makes a similar one - the biggest advantage is they are fat free. She then puts a couple of tablespoons of whisky over it when it is still hot. I will check her recipe and if it is different I will post it on here.

I had been looking forward to making this relish but there is no way I could get the limes dried during the summer. I shall try working limes into one of my relish recipes. I know it won't be the same as your Mom's FANCY but the idea of lime relish has quite caught my fancy - excuse the pun.
