    Just found our Christmas Dinner from last Sunday...oops. :heehee: 20221225_151531~2.jpg

    Duck and all the trimmings, we didn't bother with the Christmas Pud as we were full enough.


    Back to normality today.

          Roast lamb and mint sauce, potatoes, cabbage, peas, sprouts, carrots and gravy. Pudding 2 mince pies with whipped elmlea and cranberry sauce.

            Roast lamb here too. Reverse seared it, served with sprouts roasted in mustard, roast parsnips and potatoes, steamed carrots, onion sauce, gravy, redcurrant sauce. Apple crumble for desert. All sides apart from potatoes were from the allotment

                I made some fettucine alfredo and tossed in my leftover turkey chunks. And I'm about to make some Baily's Irish Cream ice cream. My next door neighbour gifted me a bottle of the cream so I will give most of the ice cream to them :) I have leftover egg nog and a recipe for egg nog muffins that apparently freeze well so I will be baking these this afternoon. :)

                I don't need to bake any more bread as I'm chocker block with it and so are the family and neighbours ... This looks like something @Victoria might have going :heehee:

                  This is a puzzlement to me Lori. But I would go for the Bailey's Ice Cream and how about Egg Nog Ice Cream too?

                            Cheat's dinner tonight, but it works!

                            2 x chicken breasts
                            Frozen stir fry veg (in this case, we had Kirkland which was lovely big chunks)
                            2 x packs of chicken Super Nooodles/instant noodles
                            1 x vegetable stock cube, add to noodles as they are boiling
                            Satay sauce, poured - https://www.amazon.co.uk/Dr-Foos-Kitchen-Coconut-Marinade/dp/B07MV3JWZB (it is cheaper to buy in Costco and a bottle will do 4-5 shots at making this)

                            Tenderise the chicken breasts, slice thinly. Make the noodles according to pack instructions but add additional water (circa 200ml) and stock cube, fry the chicken, add the stir fry veg, once cooked sufficiently, add the noodles then add the satay sauce until you get the consistency you want (depends how saucy you want it), warm through a bit and serve.
