Brine is the usual way, I believe. Sodium Hydroxide would be used on oils (including olive oil) to make soaps.
It is fairly easily killed out by mulching. Any that do get through are easily pulled or hoed (sp?) off.
Grating is best done outside on a windy day. If you think onions nip your eyes !!!!
