      Hello chums:)

Right, as promised are the results of my efforts.

      PICT0040 (1280x960).jpg

      PICT0041 (1280x960).jpg

I also had a slightly smaller one

All in all, I'm quite pleased with the results, given that I made a couple of mistakes.

Well done Freddy, a great result. And well done to Zigs's and Loli too, at least you've got something for your efforts.

The question for me now is whether these big onions will store. I found a couple more starting to go soft in the week so made some more onion soup, but it all went horribly wrong. I've made quite a few batches in the last fortnight always using just one onion and it has been lovely. This time I went for double quantities, I think I hadn't sweated down the onion properly, even though I cooked it slowly and it took me the best part of one evening preparing and cooking. It had a bitter unpleasant taste - it had to be thrown out in the end. Ah well, live and learn.

That's a shame John, wonder if they're better sweated down in butter, I know oil makes puffball mushrooms bitter, don't know if it would do the same to onions?

That could be the reason thanks Zigs, I used Country Life spreadable 'butter', which now I discover is "Butter (57%), Vegetable Oil (30%), Water, Salt (1.3%)" -
