They're both compositae, so it might. I check me books on witch craft.

Very similar propeties, nutritive, diuretic, bitter, apetite stimulator, beneficial effect on liver.

No record of it being dried & brewed that I can find. Might make an interesting experiment.

In case not common knowledge they can be left and harvest second year instead (and probably subsequent years) if you find the roots are a bit "skinny" after only one season. I've probably got some in the garden I can send you to try if you like Ziggy?

I still don't think they are worth growing as a root veg - given how fabby Parsnips are (and how much more "harvest" you would get from Parsnips area-for-area).

But I expect Parsnips are Pants for coffee-substitute.

I have grown them and salsify before, don't really think they would be bitter enough for coffee. They make a change as a veg and you've got the livery bit, which is good when you drink like I do. You can send us some to experiment with if you want :thumb:

Slurping Dandelion coffee as I type, lovely. :tnp:

    .

My wife's grannie used to drink Camp coffee essence, made from chicory, don't know what effect it would have on slugs and snails, but my wife says it tasted disgusting!

Her being a Scot and Camp made in Scotland, wait for the writs to fly!

Send me a PM with your address Ziggy and I'll see what I get when I try to dig some up (I grew them for last year, they were too skinny to be any good, so I left them there as my book said "Can be eaten in the second year if too skinny in the first year")

Mind you ... if I dig them up and they are whoppers (ha!ha!) then chances are we'll have them for lunch instead :thumb:
