Barbecue tips anybody?

    I used to make fruity fish curry quite often when we lived in Sheffield, 100 miles from the coast, with an excellent fish market. Not so easy now I live right on the coast, with only a small and slightly expensive fishmonger handy.

    No particular rules, just firm fleshed fish of any kind, chopped and briefly fried, then added to the pan along with chunks of fruit of any kind that holds up to the heat of cooking, and loads of spices, some passatta and a bit of garlic. Fresh coriander if you have some.

    Fruit that works well includes, apples, pineapples, plums, sharon/persimmen, although the latter adds more to the sauce than the texture as it quickly softens in the heat of cooking.

      Sadly not very good photos, but the meat tasted superb and almost melted away in the mouth. Well worth the seven hours outside cooking.:)

        Guess what I'm doing tomorrow (Boxing day)

        Yep, I'm up at 5.00am to light a fire in readiness to start cooking the above pork recipe again.

        Trouble is I want to get started now.
