Beetroot,how do you like yours?

    We just love the ones in jars from Aldi. They are tiny round baby beets and not vinegary at all, in fact, a bit on the sweet side. We each could eat a jar by ourselves.

    We find that too much / too strong vingegar is used to pickle things in England. Most of the time, if we had eaten anything blindfolded, we could only have said that it was vinegar, nothing else. My mouth puckers up now just writing this.

    So, use less vinegar and add some (more) sugar when you pickle anything next time. I think you will agree that it really tastes better and it does still preserve whatever has been pickled.

    Marley, your roasted beetroots sound very interesting. If I can find some uncooked ones in the supermarket, I think I'll try that recipe. Thanks.

    My father went through a period of what I can only describe as "pickling fever" when I was just toddling so I have grown up with an aversion to the purple menace as I call it. Its taken me over 30 years to give onions another go since then so I suppose I should give beets another chance. Roasted sounds nice Marley, I'll give it a go but I'm not hopeful lol.:dh:

    Honest folks roasted, they are a different animal.... :rotfl: Well vegetable..!! Try them..!!

    I love the stuff, but some years ago having grown rather a lot, I handed a bunch over to a neighbour, not realising that she didn't like it. Our first daughter was about 3 weeks old at the time and, a couple of weeks after giving her the beetroot, the neighbour knocked with '... something for the baby'. When I opened it, there was what could only be described as a 'cobweb' of a shawl in the palest pink imaginable. Yep, she'd used the beetroot to dye some wool and made it into that shawl, saying even though she didn't like beetroot, she wasn't going to waste it!

    That shawl served all 3 of our daughters, the colour didn't run once and it now resides in the loft awaiting (one day maybe) a grandchild - hopefully a girl.

    Oh Fidget what a wonderful story... I just love things like that, as the sentimental value outweighs anything else..!! Makes a wonderful family story to ell & an heirloom as well..!!! :gnthb:

    :gnthb: OK roders, do you all know how good it is for you..?? Do you juice..???? Here's another recipe... Did you know Beetroot juice is good for high blood pressure..!!?? A recent online release of a study carried out in Britain at Barts and the London School of Medicine and Peninsula Medical School using beetroot juice showed its positive effect on blood pressure. This small study had 14 healthy volunteers who drank two cups of beet juice or water. Beetroot juice was found to lower blood pressure as early as one hour after drinking it and the blood pressure went to its lowest level after three hours. Its effect was said to be seen up to 24 hours after consumption. It must be noted that this small study was carried out in healthy adults and there is no evidence of its effect on persons with high blood pressure, but you know to me that is another good reason for drinking it.. I usually have a couple of glasses a week as that is my tolerance level as I suffer from low blood pressure, but have been told it is still good for me as it helps my blood dissorder..!! :dh:

    This is what I do....
    Take 1 cup of chopped beetroot..
    1/2 - 3/4 teaspoon of chopped fresh ginger depending on taste..
    2 1/2 cups of chopped carrots..

    If you have a juicer then juice them....!!!! :yho: If not then combine all the ingredients in a blender & puree till all a fine pulp..
    Strain the mixture.. I do it in a seive with a piece of muslin in it..
    Chill & serve..!!! Yum yum..!!!! :yho:

    My husband has high blood pressure and I'd seen reports of this research, but couldn't find any juice to buy and any recipes looked just 'yeuk'! I'm going to give yours a go. If he doesn't like it, well, nothing ventured ....

    :thumb: Please do fidget, I hope he likes it.. I have friends who now put all beetroot in & juicejuice it & swear it helps their blood pressure, that is an acquired taste.. Be careful adjust it a bit at a time.. I can feel a difference when I have it as my recipe as says my blood pressure is the other way so have to be careful not to have it too often... :dh::D

    I suffer from high blood pressure too, and the thought of eating Beetroot drives it up and up.:hehe::gnthb:

    I made a chocolate and beetroot cake last weekend and it was delicious. I got the recipe from the WI book of cakes and can highly recommend it to anyone who has a glut of beets.
