Beetroot

Here we boil the beetroot until cooked, allow to cool (then skin and dice).

Dice a (raw) Kohl Rabi

Chuck some Greek yoghurt in

Nice colour, lovely mix of flavours

 

I meant you can't get fed up with beetroot like you can't get fed up with potatoes, after all this is our staple diet.
