Bolognese Recipe?

    Yum ... I am not a meat eater as such but love basically any mince recipe, in particular meatloaf however have not thought of putting stuffing mix into it ... good idea ... :thumbsup:

      Can't take the credit for it, @Victoria way back in the '80's when I had an occasion to rely on state benefits for a little while, a very forward thinking young mother published a cookery book called: "How to feed your family on £4 a day" (aka "The Benefit Cookbook"). It was later revised to " ... £5 a day"

      It really caused quite a stir in it's day. On the one hand, she was helping people to budget, bulk out food within their limited means and eat healthily. By contrast, critics argued that she was facilitating people to make do with an inadequate level of income and was hindering their right to a decent standard of living by suggesting benefit levels (at that time) were 'adequate' and therefore "acceptable".

            Blast! I missed out on those!

            For a significant birthday last year, Mr M most kindly had a cookery book rebound for me. It was one which had belonged to my Mother and was my father's gift to her to thank her for giving him a daughter (what a numpty! :hate-shocked: She gives birth to a daughter -when she was already bringing up 4 sons - and she gets .... a cookery book??? :thud: Pah! Yet, a man of his own generation, bless him - *he* thought he was progressive :heehee: I suppose he was - when she had his 2nd son, he gave her a ten bob note - a neighbour had given it to him to buy mother a bunch of flowers, but, at that point in time, he was too macho to be seen walking with a bunch of flowers and thought she'd like the ten bob note more :heehee:)

            As for Dairy Books ... last year, the person designated/paid for delivering the Dairy Diaries dumped his bag of them under one of my front garden bushes! See? People simply don't respect or value anything anymore (they are great diaries!)

                I have my Mrs Beetons Everyday Cookery (30/- NET) reprint 1969. Start with "The housewife" descibing the rules and regs of good house keeping:
                Expenditure and accounts
                Shopping
                Routine in the home
                Weekly and daily routines Removing spots and stains
                Home valeting
                Then the next chapter entitled NUTRITION shows a pccie of "A contemporary kitchen" and on the other side, "kitchen utensils" and what they do.
                Some great little recipes and lessons on carving, gutting, dressing a crab.
                I still go to it for basics occasionally,

                  I just looked and my 'Dairy' books are 1969 so my Aunt must have sent them to me when I was in the States (and after I was married :hate-shocked: ). I also have my Aunt's Cannon Cookery Book, which is in a real sorry state sadly. It has no date on it so I looked on the net and found this link ...

                  ... it says the 12th Edition was published in 1950 and I have the 10th Edition so must have been published in the 40s. There are some really lovely old-fashioned recipes which I love.

                    Got the first batch in the slow cooker as I type, and it smells pretty good - reckon we will easily get two good family size portions from it too. :)

                    In the end, I took the 'hit and hope' approach, as I often do when it comes to cooking - so it consists of mince, onion, carrot, celery, tomatoes, tomato purée, dash of balsamic vinegar, garlic, salt and freshly ground black pepper, wee sprinkle of sugar, oregano, basil and bay leaves.

                    As a rough estimate, I think it is going to work out at around £2 per portion, with that portion feeding three of us. :dancy:

                      Buy a Hare, ask the butcher to skin and dress it if you need to
                      Must have been for a big family as it goes on to roast half a stone of Potatoes

                        I've just been stealing ideas from this old thread as I need to adapt my homemade sauce recipe, not having found any on the web I like. :)

                        I had to give up eating beef a couple of years ago and switched to making pork meatballs for spag' bol' but it's not quite the same. I've tried pork mince but find it bland, even with the sauce, so I ask....has anyone tried it with lamb please?

                        I find it works OK with lamb mince and it tends to be softer than beef. You may still need to skim off the fat as most lamb mince has a fair proportion of it. It actually works better than with a low fat version of lamb.
