Bread making

    Very well, my bread turned out lovely lovely lovely, Hubby is entranced so I pass on the recipe, I made some changes from the original, this is my own version.

    A small/medium onion, finely chopped
    A cup or so(something less perhaps) of walnuts, roughly chopped (I used a pestel)

    650 g of flour
    400 ml (scarce) of milk
    a cube of fresh leaven
    2 tablespoons sugar
    2 teaspoons salt

    Lightly fry the onion in a tiny bit of oil until tender. Leave to cool
    Mix sugar with the milk (lukewarm) and the leaven.
    Mix this with the onions, and about a cup of flour and the salt. Then add the rest of the flour, until you get a decent firm dough. Knead until it is nice and smooth. Leave to rise for 45 min or so.
    Punch dough flat, scatter the nuts on it, knead them in, divide in two round, somewhat flattened loaves, and leave to rise for further 45 min. Place them directly on a baking grill with baking paper on it.
    Bake! With my (excellent) oven, the bread and pizza setting is 250 °C, and it took exactly 22 minutes to get the bread nicely brown outside. The inside is wonderfully tender.

    Yum. Bread and butter danger. Next time I will change some of themilk with water and halve the suger, to see it itcan be be made in a slimmer version and still be so good! ;)

    Not a lot of room left in the cup for chocolate... but, must admit that would be nice.

    Always fancied making our own bread, and considered a bread making machine, but put it off for years. And I mean years, cause before I got arthritis in my wrists I could knead it without any probs. Only bought my first toaster about 3 years ago..........

    Anyway, last year at the local car boot, they were selling one for £4-50..can't remember the name off hand. The woman stall holder said she had bought it for her Mum who only used it once...still boxed with instructions and everything, so we thought why not.

    Its great...got loads of settings on it and is so simple to use. Also its got a timer on it, so you can wake up to freshly baked bread smell and bread of course.:thumb::thumb:

    Couple of nice recipes on here, so I shall copy them and print them out to stick in my bread making book.

    Mind you, I do make a mean cheese scone even though I do say so myself...have to make a pile (and hide some) cause everyone loves em:D

    All this talk of home made bread - YUMMY!

    I have a breadmaking machine but I only use it for making the dough
    as like you Tweaky I have arthritis in my wrists.
    I take the dough out and put it in a bread tin to rise and then cook it in my
    Combi-microwave - convection.

    Results are great - but I had to stop making it very often because I eat too
    much of it - not good for my diabetes :mad:

    No secret mate....but maybe its the extras I put into them...will post it up tomorrow for you, cause I can't remember off the top of my head....but they are great cold, when your on the puter...all the crumbs fall in your keyboard....brilliant.;)

    Used have a kenwood Breadmaker but now have a Morphy Richards Fastbake. Mainly make white, Granary and half & half and dough for rolls and pizza base. Ocassionally put either sunflower or pumkins seeds in.:thumb:

    You see o2 us walnuts have some uses we hang about in Ivorty's garden and look yummy in bread.:D:D

    Anyone make Soda bread?...I last had it in 1984 when staying with friends in Westport, Eire.

    I have never tried soda bread but I think it is made without yeast?
    and I have read it's best served while still warm with thick real butter! :thumb:


    I forgot to buy bread at the supermarket today so I have to get the breadmachine
    out tomorrow morning and give it a whirl..:rolleyes:
