I don't like cooking Daisies so I cheat! My stomach not being able to cope with 'manufactured' bread any more I invested in a breadmaker a few months ago. I make two loaves a week. :)

oh really? I never thought of that angle. It makes perfect sense.

Got my new breadmaker yesterday - just going to unpack it and put it to use!
I so hope it works again. I am truly fed up with shop bought bread .... :eeew:

I've made bread off n on I'd really like to get into making sour dough bread though! Probs is the kids aren't such big fans. They're trying new breads though by letting them choose from the bakery section I'm hoping a few months of that will make them more open to my homemade breads lol

I 'borrowed' my dad's old bread machine ( breville deluxe baker's oven) and have tried various recipes and flour combinations, but the bottom is always over baked. I've tried different settings etc.Maybe it's the machine, and I should invest in a modern one? My favourite recipe so far is Nigel slater's rye/ spelt flour loaf. I make half the quantity and bake it as for a whole meal. The cheese and walnuts in it make it wonderful!

Got me looking through my old cookbooks, as I remembered I used to make a really good loaf from the fanny and johnnie cradock cookery programme magazine, price 4/6. They used the sponge method, but only left the sponge for 20 mins before adding the rest of the flour. Result was a delicious light loaf.

@Ariadae - I've never had success with making bread in a breadmaker either. You can get a loaf out of it, but mine always had a kind of a steamed look and taste and always disappointing, not a proper crusty loaf. And the shape is odd too of course. Mine BM does a good job of mixing the dough on the dough setting but I don't do anything other than that with mine.
Your mention of Johnnie and Fanny made me smile, what characters. I always felt a bit sorry for Johnnie, always fetching and carrying!

Always get a crust on our loaves GG, we use mixed grain flour. Makes excellent dough for rolls, Hot Cross Buns and pizza too.

Clearing the cupboards out at the moment so just lobbed a packet of sage & onion stuffing in the bread mix, could be interesting

In a local restaurant at the end of January I was offered beetroot and horseradish bread for a starter, it was delicious. I've being searching for a recipe on the web but can't find one, can anyone help please?

I make my own, not very scientifically, I lob flour, poppy & linseeds in a bowl and leave it to rise overnight, then give it a kneed in the morning so its fresh for breakfast :)

As I said, I bought a bread maker which arrived last Sat. Sunday tried it out and followed the recipe suggested in the book but the dough got kind of stuck up the top of the pan and no matter how many times I pushed it down, it flipped up there again so the paddle was whizzing merrily around in thin air! That went back!

So I made some the old fashioned way by hand and this was the result - could have done with less time in the oven and/or a lower temp but it's good eating!
