Pete, yesterday I had a curry made with Naga chillies :rolleyespink: :) - at an Indian restaurant and it was superb. There wouldn't be the same flavour by using more of the not so hot ones instead of the Nagas.

Unless you're able to taste the flavour of the chillies I agree that you might as well just use more of the others. For some of us nutters, we're able to eat a raw chilli, blindfold, and tell from the flavour what group it comes from. :heehee:

No, James :). Phall is usually cooked using a lot of hot chillies but they don't use Nagas in it as the flavour is too distinctive for that. I'm not normally interested in eating phall as it is hot just for the sake of being hot.

This curry was a perfect balance between flavours and heat and, although it was done with Nagas, it was a little bit hotter than a Madras. They put a dried Naga on top of the curry so it could be cut up and spread into the curry if I wanted to do it.

The only time I have 'phall' is when I'm in the Indian state of Karnataka where it's the local name of a form of barbecued meat  . I hope to be out there later this year when I should be touring around Asia.

I rarely have dried chillies as I tend to eat them all fresh but I think I may have some dried ones of the variety in post 19. They were very hot. Send me a PM with your address. :dbgrtmb:

        Never mind.

I'm unlikely to bring back any from India. I'll be doing a lot of travelling and don't want to bother taking a chance on taking them in and out of other countries as some of them have tough laws on plants and edibles. If India had been my last stop it would have been different.

Right, I only need the one and my mouth is burning.

So I wonder, do you actually taste other food?
I'm being serious, its just that if you can eat chillis raw, have you actually got any taste buds left.:)
I'm assuming anything that doesn't contain chilli seems bland and tasteless?

Yes, I can taste other food very well (love roast beef and lamb  ). I was even asked to write a report on different types of smoked salmon for a large company that smoked it. That was very interesting as they sent me a chilled case of different flavoured smoked salmon and I had a dinner party for friends where I used that as a taster session before dinner.

When we go for meals at some of our friends' houses they always test me to see whether I can work our what ingredients have gone into their food and I usually get most of it correct. As you have probably worked out by now - I love my food! :heehee: I also used to teach cooking at evening classes. :dbgrtmb:

Oh, OK, I was just curious how you can eat raw chillis without actually burning your mouth, but at the same time still be able to taste food that did not contain strong flavours.:blue thumb:
