Ok. I have only been making chocolate for a month or so. I stopped doing it in the summer as the choc takes a lot of setting.
I used molds as you can see.
Bars of plain, white and milk chocolate are mixed and melted down as required.
Molds are slightly filled and then the secret filling is added and finally topped of with another blend of chocolate.
Takes ages to make a dozen but yummy to eat.
I may add a splinking of cocoa in the mold first or run some white chocolate in streaks across the mold.
I have used brazils as a filling and walnuts as a topping.
    The options are numerous.

They look wonderful Robert :) Do you do any special types of fillings? I must admit, looking at yours, I've given thought to making some at Christmas time - I love to give homemade gifts to hosts/hostesses that time of year - and these would be perfect. I am partial to fruit cream fillings though......but of course, if I'm gifting them....does it really matter what my favourite is? lol

A blend of melted mars bars and evaporated milk is rather tasty for a filling.
I am going to experiment with some fondant sometime.
    watch this space....

We did truffles as Xmas gifts for friends one year. That was fun :thumb: (and not too hard!)

Gorgeous Robert, truffles are great fun to make and easy as is fudge, cinder toffee is a bit risky though-still have the scar running down the outside edge of my left hand to prove it.

Making truffles at Christmas invariably leads to cocktails in my house as I have all the liquers out lol-well it is christmas.

Claire, Robert & Kristen - can I offer to be your Quality Assurance (aka Chocolate taster)? I'm sure you wouldn't want to disappoint your friends at Christmas - I'll do it for free :thmb:

That will require coming to dinner and drinking copious quantities of alcohol and eating vast amounts of meat, home grown veg and fruit ...

... and getting an invite of course :hehe:

The chocolates look very tasty indeed Capney. My son and I tried making Truffles after watching a C4 programme about Willie Harcourt-Cooze and his venezuela chocolate business. He has an extremely good web site thats worth having a look at. Here> http://www.williescacao.com/ lots of ideas and information about chocolate, which you can buy it from Waitrose to make in to sweets, cakes or drinks.
