Cooking curry from scratch

    Dim, fenugreek is quite an important ingredient in curries. :thumbsup:

    One of my own curry powder recipes that I used to make in bulk (but don't use now as I have time to cook each curry individually) is:-

    5 tbs. coriander ssed
    4 tbs. cumin seed
    1 tsp. fennel seed
    6 whole cardamom (white/green not black)
    2 tsp. poppy seed
    2 tbs. fenugreek seed
    2 tsp. black mustard seed
    3 tbs. turmeric powder
    10 whole cloves
    6" piece of cinnamon
    2 tbs. paprika
    2 tsp. ginger (although it's much better to use fresh ginger in each curry)

    The turmeric and paprika add some flavour but also add colouring and help thicken the curry
