Courgette Fritters..

    These crisp little pancakes are a perfect food for children; serve them with dips & watch them disappear!! We all have problems using them when we get a glut, this is a useful quick little recipe.... :thumb:
    Prep Time: 25 minutes

    Cook Time: 8 minutes

    Total Time: 33 minutes

    Ingredients:


    • 2 cups grated courgette
    • 1 cup finely chopped onion
    • 1 tablespoon olive oil
    • 4 cloves garlic, crushed
    • 2 eggs, beaten
    • 1/2 cup grated Parmesan cheese
    • 1/2 to 3/4 cup flour
    • 1/2 teaspoon salt
    • 1/8 teaspoon white or cayenne pepper
    • 1/2 teaspoon dried thyme leaves
    Preparation:

    Place the courgette in a clean cloth, gather up the edges, and squeeze hard over the kitchen sink to remove excess moisture. In heavy skillet, heat olive oil over medium heat and cook courgette, onion, and garlic until liquid evaporates. Remove from pan and place in mixing bowl; let cool for 30-40 minutes.
    Add beaten eggs, Parmesan cheese, 1/2 cup flour and seasonings to make a batter. You may need to add more flour if the batter doesn't hold together when dropped from a spoon.
    Heat your deep fryer..Uusing a tablespoondip into batter and drop into the heated oil. Fry the fritters for 2-4 minutes on each side until deep golden brown. Drain on paper towels and serve warm. (can be shallow fried too... :gnthb:

      Great Marley, do you think this would work with Marrows? We are getting a glut of those, but maybe they are a bit too juicy for this recipe.

      We also make them with spring onion added...which is nice.
      They are also a good way to freeze courgettes. Once fried, freeze them and then to re-heat just put them in the oven for appx 25mins :)

      :thumb: Spot on Alison, I just use any onion.... :dh: :D You are right about freezing them & they make excellent quick snacks & meals for the kids just re-heated in the oven.. :thmb:

      my daughter loves them...will eat them readily as a snack even tho' she claims to hate courgettes!!!!
      although she does insist on calling them cougette critters!
