Courgettes and ... male flowers!

    @Zigs I haven't found the other quick recipe but I don't think I could last year either as I did this one instead and was very nice..

    1lb courgettes
    1 small onion or 2 shallots
    2 tbs salt
    2 cups cider vinegar
    I cup sugar
    1 1/2 tsp mustard powder
    1 tsp turmeric

    Remove the stems from the courgettes,was and then slice them thinly.
    Peel the onion, and thinly slice.
    Combine them in a large bowl and toss with the salt.
    Cover with cold water, and place a few ice cubes in.
    Stir to dissolve the salt.
    Let everything hang out for an hour.
    Then drain and pat dry on some paper towels.
    Meanwhile, add the vinegar, sugar, dry mustard, and turmeric in a small saucepan. Bring to a boil, then reduce the heat to a simmer and cook for three minutes. Turn off the heat and let it cool.
    Transfer the courgettes to jars and pour over the vinegar mixture.
    Seal the top and set in the fridge for a day. Then use..!

        This one did it was nice.. You can add chillis or other spice if you want but I found these just nice...
