Sorry to drag up a old thread but I've just harvested a load of seeds and would like recommendations on how to dry them and how to use them in cooking. All I've done with them so far is put them in jar and put them in the airing cupboard.

    Ta!

PS Too many 'them's in that sentence!

    Hi nfrost.

I would treat the storage of the seeds the same as you would with harvested seed for sowing next year. So store in a paper bag, so that they can dry out naturally. After about 4weeks, you can transfer to a glass jar. But if you seal too soon, you run the risk of humidity building up.

(And thanks for reviving an old thread - great to see its not just me and my tribe of caterpillars who are fans of bronze fennel!)

Here’s another Fennel question: I have just cleared a patch of ground which was full of small self-set fennel plants (Herb Fennel) – the roots are like thin white carrots – are they edible? - perhaps raw as part of a salad or included in a vegetable soup?

My book says the rhizomes are used medicinally, but doesn't mention about nutritionally.

I'm sure this came up a few years back, i'll do a search for it, see what we came up with.

We didn't come to any conclusion in the old thread i'm afraid.
