January is a bit of a skint month in our house, so I have to be very frugal:)

Today, I have fried up some mince with whatever veg I had lying around (parsnips this time), plenty of gravy and herbs, and my collection of stale bread, all chopped up small. Inspired by Zig's bread pudding concept, once all the old bread has soaked up all the juices in the mince to make a meaty dough, I've packed it all up in those takeaway type containers. I got three family sized savoury bread puddings/meat loafs. One will be baked tomorrow for tea, the other two are in the freezer for another day. Some meaty bready pudding, some garden peas, some home made tomato based sauce (very cheap, largely consisting of tomato puree, water, garlic, herbs and spices), and there's a lovely hearty meal for next to nowt.

Well done Clue. We are fans of meatloaf and I always put some bread in it, in our case brown. No veg as that's for the side with potatoes at mealtime. Add seasoning, chopped onion, a little ketchup and Worcestershire sauce. Very tasty and economical!

Also love a good meatloaf. There are so many combo receipes for it. My favorite is the three meat combo, ground pork, veal and beef. Then bread crumbs, 2 eggs, thyme, Worcestershire sauce, ground mustard, pepper, salt, sour cream, grated onion, grated garlic. I use chillie sauce on top before baking it. Also veggies and mashed potatoes for the sides.
