how best to deal with sprouting potatoes?

    Solanine is always poisonous. It messes with your central nervous system.

        Well I've always cut out the green bits in or around the potato carefully, and my husband, maybe less carefully. I just haven't thrown out the whole thing.

          And what about the green bits in carrots? If the top comes out above the soil, that top gets green. Can you eat that?

          I don't believe that's harmful. In fact, some health fanatics actuallyadvocate eating the foliage of carrots, as its apparently high in some immortality bestowing super nutrient or other.

            I don't mean the foliage, I mean the top of the carrots themselves, of the roots.

            Can't imagine that green carrot tops would somehow be bad when the root and foliage are both edible and nutritious.

              I try to avoid stored potatoes sprouting by preparing a good part of our harvest into products that freeze, so amongst others that would be, mash, chips, dauphinoise, boulangere, croquettes I even make and freeze a few Anna. The rest of the harvest is used as normal so that by this time of year when sprouting can occur most potatoes have been used and we still have a good stock of "product" in the freezer which will see us through till next harvest.

              A good half of the frozen potato is mash as this can be defrosted and turned into many things by turning it into a duchese mix. And the chip are huge so can either be 3 x cooked or roasted with other veg etc.
