Right where's can I find the recipe @Zigs ? My usual tipple is Grouse if I can get it on special for about £15 a litre or failing that some supermarket own brands aren't bad. I hate most malts (luckily!) Where would you place carrot whisky? towards malt types or good old rot gut?

I don't like malts either, makes quite a dry one.

If you use a turbo yeast you could get it up to 25-30% without doing anything further to it. You'd need the right finings though, as it leaves a bit of a taste behind :)

Sorry for the late reply. My OH says that she blanches all of our vegetables to kill any bacteria that could be lurking around. For carrots she just brings clean water to the boil while washing and topping the carrots, they go into the boiling water for up to a minute and then into cold (she says it doesn't have to be iced) water, pat dry and freeze when cooled, for other vegetables she adjusts the boiling time depending how soft or hard they are.
      Hope that this helps.

I grow autumn king and once upon a time lifted them and put them in boxes to store over winter. However over the last 3 or 4 years have just left them in the ground and they have lasted just fine. This year we ate our last freshly lifted carrots in late April - a tad hairy but prefectly edible..
