    I adore ranch eggs Mexican style; thank you for posting your version of it :thumbsup:

    There is a restaurant in a nearby (ish) town which has been running for the past 30 years serving Mexican food and their version is to die for! I only get to go there infrequently. Your version is very do-able at home :thumbsup:

      Today I thought I would do something different with the potatoes.

      I bought cheddar cheese with garlic, parsley and chives. I was pleased to find this as these are the herbs I would have mixed in with my plain cheese if that was the best I could have done.

      I boiled and mashed the potato early this morning giving it plenty of time to cool down before handling it. I cut the cheese into small cubes and wrapped each one in mashed potato and then put them back in the fridge. I covered them in breadcrumbs and put them in the oven. They were in there for about half an hour which was the same time as the parsnips and the red cabbage.

      The red cabbage was leftover from Xmas. It had been frozen and thawed out again. The sauce was leftovers too. I made far too much a couple weeks ago or so. It was too good to waste so it was frozen. I often end up using leftovers when mum comes to tea.

      There were clean plates all round. I must be doing something right.
