    Hi Jjordie
    At long last, here it is, straight from the Texan's mouth (well, via her E mail anyway!)
    Pumpkin Pie;

    Ingredients

    Shortcrust pastry
    425g Pumpkin
    150g soft brown sugar
    3 x 2.5 ml spoons cinammon (ground)
    1 x 2.5 ml spoon ginger (ground)
    1 x 2.5 ml spoon nutmeg (grated)
    1 x 2.5 ml spoon salt
    3 large eggs
    250ml full fat milk
    125 ml evaporated milk

    Step 1 ; Pumpkin preparation
    Cut pumpkin in half and spoon outseeds and strings.Cut remaining pumpkin into small pieces and use veg peeler to remove rind. Then steam these in pressure cooker for about 20 mins before draining and mashing. What you don't need can be frozen.

    Step 2 ; The Pie

    Roll out pastry and line a 25 cm pie plate and chill in the fridge.
    Mix the pumpkin with the sugar, cinammon, ginger, nutmeg, salt.
    In a seperate bowl, beat the eggs, add the milks and mix well.
    Mix this with the pumpkin mixture and pour into the pastry case.
    Bake in hot oven (180*c, Gas Mk 5)for about 40 minutes - or until a knife inserted in middle
    of pie comes out clean.

    Serve cold with loads of cream
