    My " work of art " is still sitting in the fridge at home. I do take it out from time time to have a sniff - just to remind myself how good Chocolate should smell. It wouldn't win prizes though.... Hotel Chocolat  St Lucia  January 2013 519.JPG

      Many moons ago, I recall, at Junior School, we had a project on "chocolate": our experience began (and ended) with bringing in chocolate wrappers into school. Well, we, as a family, very rarely had chocolate; so my adventure was limited to finding wrappers blowing in the wind :heehee:

      I rarely eat chocolate (and Mr Mum has it stuck in his brain that, when I do, I'm a "Galaxy Gal" - truth be told I'm a 80%+ cocoa gal! Shh!), but, when the fancy strikes, it is still (to me) a marvelous luxury wrapped in mystery.

      Your posts, desolve the 'mystery', but add a degree of awe. Who knew it was such an involved process? :dunno:

          Jenny all of your posts have hit my taste buds - being a chocoholic is a hobby for me.
          I have to have some form of chocolate everyday - my excuse is that it gives me strength. :yes:

            I really do wish we were all out there: grafting cuttings, planting up Forestero rootstock seedlings, making composted soil to put in those little black growbags. Turning the fermenting beans in vats and those out in the sun. Many hummingbirds and butterflies around the nursery and at night , amazing fireflies and the racket of croaking treefrogs. And the repetetive whistle of crickets - they sounded like a hinged pub sign in dire need of WD40 !!
            So glad I was able to give you in insight into all of this. They are putting in the foundations for a chocolate making factory within the Rabot Estate. It will form a part of the Tree to Bar Experience in about 5 years time....
