Knowing how determined your dogs are, is there a possibility they could get under the gate with a little bit of digging? Or, does the bottom of the gate flex as there is no bolt on it?

Open to suggestions - I had been pondering something along the Virginia Creeper line, but then I thought it would be too heavy and too risky (in terms of it getting out of hand too quickly?)

I'd be highly sceptical on the basis of a loganberry we had at the back of the garden that was supposed to be thornless (it wasn't, and it was a thug) and blackberries that were also supposed to be thornless and most definitely weren't and aren't... we are still battling them to this day.

They don't seem to be bothering the bottom as the slate is there - I can add on some more of the mesh or even some more wood to lower the level a bit if I need to. The gate hinges are such that I can just lift the gates off.

I am not happy with the two locks holding the middle together though, so I am going to fit a fold over hoop style next weekend.

You did read my mind there as I looked at that this very afternoon, as well as clematis montana.

For one side, it will need to be quite shade tolerant and for the other side be quite drought tolerant and up to fighting with a plum tree

Both of them are pretty tough so should be OK. Montana grows exceptionally fast.

That might be a good thing - to be fair, even if it escaped on one side and headed for the laurel and evergreens behind it, I am not sure I would care

                Armandii or Montana?

Slightly related to this one, does anyone know of plants/trees/shrubs that are good to grow to a fair height (6-8ft) without getting right out of hand and screen noise?

Hmmmm... if needs must, it might have to be. I'd rather not though

Eleagnus ebbingei, every time. Plain silvery greeny grey or striking variegated 'Limelight', they both have tiny, scented flowers and pretty silvery pink berries. Take any amount of hacking back if necessary, no pests or diseases.

Now that does look like a contender! It would mean losing another chunk of garden, so it will be a last ditch choice.
