    Well, something is happening - I have just had to crack the lid on the bucket to let gas out as the lid was puffing up. Amazing how quick the yeast gets going.

        Definitely - I will leave it in the bucket for a week or so, and then transfer to the demijohns with air locks which will save me having to keep on cracking the lid open

          In my home brew days I used heat trays to start off the beer . The wine in the demi johns needed no heat . The fermentation was incredible to watch everything popping away ! Never brewed from raw ingredients . I used the Boots home brew kits which were superb . This is going back 30 years so things have moved on a touch . Now I just ask my butler to pour another glass of the Dom Perignon cuvee reserve, with a Vimto top :biggrin:

              I made (what will hopefully turn into a) chocolate porter today by adding brown sugar & cocoa powder to a £3-cos-its-close-to-sell-by-date Youngs porter beer kit ; smells nice now & its fermenting away at nicely - possibly a bit too nicely, it might be out the airlock at this rate - see what happens when we have a sunny few weeks !

                I have a feeling that it is about done - I haven't heard any bubbling for a day or so, so does that mean it is time for the next step?

                Do I need to add anything at this stage (campden tablet or bentonite?), or is it just a case of transferring it to clean demijohns via a filtered funnel (should I add a coffee filter for even finer straining?), or do I save the bentonite until after it has been transferred through the filter?

                I bought a book about winemaking today on Amazon, so I think it is fair to say that I am getting the bug. :snorky:

                  I'd rack it off and then add a campden tablet to make sure the yeast is done for.

                  I've used filters before, can take a while and there's always the danger of a vinegar fly finding it :yikes: So best to use the kryptonite at this time of year.

                    You wouldn't believe it, but I have just heard bubbles! It is like going to the dentist.

                    I have a stainless steel funnel with a relatively large filter (not as fine as using coffee papers), which I will run it through to get the biggest bits of flotsam out. Would the bentonite help to make the finer stuff sink before finally racking off?

                        The other day I sterilised the hydrometer, dunked it in, took the measure and then when finished tasted - I must have done something wrong :eeew:I had to dump mine -

                              The book that I got yesterday is really good. Two recipes in there that I might try next - one is Ribena wine, and the other is strawberry wine.

                              The apple wine looked tempting, but is says that it won't be ready for six months!
