What Are You Eating Tonight?

    Lunch today was Courgette soup..
    1 large courgette
    a couple of new pots from the garden
    1 small onion chopped
    2 cloves of garlic,
    1 lg sprig fresh thyme S & P to taste
    grate of nutmeg
    1 tin of Coconut milk.

    Wash & chop the veg & put in pan with coconut milk thyme & seasoning bring to the boil gently & simmer till potatoes are soft.. Remove thyme & puree..
    Serve with crusty bread..

      My missus doesn't like coconut milk either. Sometimes when we order a takeaway, I choose ones that I happen to know have coconut milk in them (not just because they have coconut milk, but because they are nice dishes).

      One day the wife had chosen a Madras, and I'd gone for a Ceylon. I got her to try some of mine. She asked accusingly, 'it doesn't have coconut in it does it?'. 'No', I lied. So she had some. She remarked how much richer the flavour was than hers, and how all the flavours seemed to be enhanced, hot yet without the raw sharpness of her madras.

      A few times when I've tried to cook Indian or Thai, I've sneaked in a can of coconut milk. On those occasions the wife enjoyed her dinner more than usual, yet she still hates coconut milk:)

        Oh, sorry Dim, don't really buy cheese powder----Snobby she says---- Bought a hunk of the real thing, fork broke it, blended it with real cream, a gentle heat applied until smoothed out and then took off the stove to pour on the steak.

        Dim, I usually cook my lamb shanks for a good 4 hours, slowly, in good broth, onions, garlic, tomatoe, and lemon peel.

        Think I'll try some of Marley Farley's courgette fritters

        But I'll start with using yellow courgettes as they might be more suitable than green ones as they seem to contain less moisture.

        a tesco ready cooked barbeque chicken (the warm/hot ones done on the rotisserie) ... remove the chicken from the bones and cut into small pieces ...

        add loads of mayonaise, a few capers, some sliced gherkin add some pepper and make a toastie (toasted chicken mayonaise) .... was a south african favourite, but have not seen it here in the UK

        Hey, *dim*, the capers in there sound great. I just picked out a roasted chicken for chicken salad sandwiches and the left over treetreetreetree will go to the cats. (its only 1PM now) so that will be a lunch thing, and for work tomorrow.

        Not sure about tonight, thinking Lobster ravioli with zucchini & tomatoes on the side, a delicate cheese sauce for the lobster.

        Been out in the garden most of my day.

          Just googled and there could be like 3 zillion leaves come the fall

          Redstar, IF I was adopted then I would be like FAMILY and we could invite Clueless across in the Fall, to do the leaves, and I could brew the TEA:yess:

            I do not think, I would be up to trimming the hedges and cutting the grass in your garden
            And at my age the constant running water could be a problem

            The Peacocks are not a problem there a six roam around here, and you get used to the noise, there used to be ten, but they taste so good

            Ok with dogs but the Dobermans/ Irish wolf hounds may be a bit boistrous :-)
            Though I could handle that with the chance of Spag garlic oil and chilli al dente off course
