Oh dear ... fruit only diet and gruelling sessions in the gym. It's all making me feel rather guilty. My gym membership card reproaches me every time I open my purse. But but but the weather is very sticky. Maybe I'll wait till next winter.

PS I'm doing mushroom and garlic pasta. I'm at home tomorrow so I don't have to breathe over anyone.

Did anyone see Alys Fowler doing damson vodka on the edible garden program. It was 1Lb of damsons washed and pricked all over with a cocktail stick put into a pre
serving jar, added 1Lb of sugar and 1Pt of Vodka fasten and leave for approx 3 months (just ready for Christmas me thinks) can`t wait for the Damsons to ripen.
I am on cherries and strawberries at the moment.

    ^^^ That sounds lush!

I was racing most of the weekend- and so mostly ate pasta and sandwiches. I didnt cook at all.

My selected race - the Quad- two 2nd places (one via repecharge).

Double sculls - placed first- which is a bit of a miracle as I had to step in last minute for someone who turned an ankle.

Today Ive mainly been eating ginger biscuits!

Yesterday I got a large chicken from the local butcher and cut it into a number of different cuts and then cleaned it up. As it was a large chicken I removed the breast and froze one of them. The other one I chopped to be used in a stir fry. The drumsticks, thighs and the thick part of the wings are marinating and will be roasted. The end two joints of the wing and the carcase I used to make a chicken soup that will make at least four helpings each for us..

Marinade consisted of olive oil, roasted and ground cumin and coriander seeds, fresh ginger, freshly picked garlic, ground black pepper, paprika and lemon juice - to be eaten tonight.

Stir fry (last night), cooked in two woks at the same time :thumb:, wok 1 - chicken with spring onions, garlic, ginger, and freshly picked chilli with a drop of sherry (didn't have any rice wine :hehe:); wok 2 - spring onions, garlic, ginger, mangetout, baby corn, carrot, celery, freshly picked courgette, mushrooms, home sprouted bean sprouts and soy sauce. Yum Yum. :yho:

Total cost - less than £10 :old: :)

For two days Ive only eaten ginger biscuits.

This evening however I will be stuffing my courgette flowers with minced pork, mashed potato, apple, sage and rosemary. Then dipping them in a Japanese tempura and deep frying for a minute.

I'm just waiting for my rice to cook before I have the curry I have just made.

It is a beef curry made with shin - in my opinion that is the best cut to use for this type of meal. I made my own curry powder roasting and grinding cumin, cardomum, coriander, fenugreek, cinnamon, kalonji and cloves, then added turmeric. The base for the sauce was home grown onions, garlic and chillies cooked with fresh ginger, home grown bay leaves, methi leaves and home grown tomatoes plus some juice squeezed from some tamarind seeds and pulp. Towards the end of the cooking I added some potatoes and some coriander leaves.

Rice should be ready now. :yho:

    Good appetite Shiney!

I come here to show off that Ive made an incredibly tasty meal- and you've turned into a Indian super cook. I surrender! Your dinner sounds soooo good, you're very lucky Ive eaten.

My dinner of stuffed courgette flowers - I used minced chicken instead of pork, parsley, coriander, chilli onion and mashed potato.
Served with massive salad and two dipping sauces- lemon parley and garlic and sweet chilli.

PS what are methi and Kalonji leaves?

That looks wonderful and now that it is done with chicken I really fancy it. :gnthb: :)

Methi leaves (kasturi methi) are the leaves of the fenugreek and kalonji seeds (nigella sativa) are little black seeds that have a slightly sour peppery flavour and are also known as onion seeds. It is sometimes used on naan breads.

Thanks Shiney, certainly would enjoy the visit. Did go out to local restaurant. Had a nice salmon platter with interesting sauce.
Friday night, grilled up two thick steaks, roasted eggplant, and fresh corn on cob from market. Today, Saturday, waiting for two loafs of bread to rise then off to baking it.
Have some chicken and mushrooms in fridge now, will put that together later and zucchini.
Have been hankering for some ice cream, might go out and get a pint.

Your fritters look good Melinda. Have you tried sweet potato banana fritters with chopped pecans in them. Google for recipe. Really yummy. And a great way to use up a roasted sweet potato. Always roast a few extra.
