What did you have for dinner?

    Last night was a double triumph! I did mushroom risotto with a chicken breast wrapped in streaky bacon and cheese.
    As always I got my portions wrong so the leftover risotto was made into risotto cakes and put in the fridge overnight.
    Step forward to this morning and breakfast......................
    Fried the risotto cakes and served them with a poached egg plonked on top - a total triumph, even if I do say so myself!

      Just something simple for us: Bangers,fried onions, roast parsnips, mash made of sweet and normal potatoes, and baked beans. Washed down with a nice ice cold Crabbies Ginger Beer.:thud:

      There were quite a lot of us for dinner, so a lot of choices.

      Sweetcorn and coconut soup, various salads, smoked - salmon, trout, mackerel, a variety of grilled meat (some with various flavourings) , corn on the cob, roasted veggies, mash, breads and a variety of desserts.

          Mine weren't that posh!! They are good though!

          For dinner last night we had cheese and Jacobs cream crackers. Lots of cheese!!! Especially lots of Brie de Meux (which is the absolute king of bries). Lovely ripe Oxford Blue, crumbly Cheshire, an proper old fashioned hard Cheddar, Double Gloucester, an extra mature Gouda and all washed down with more Brie de Meux (I really do like that!!).

                  Chinese christmas dinner for us.

                  I.e. left over sprouts, carrots and beef roast chucked in the wok with some rice that had been cooked in the leftover juices from the slow cooker, in which I cooked the beef yesterday in red wine. Served with leftover gravy that I heated up and spiced up a bit.

                      Moussaka! Greek stylie with lambs mince cooked with a cinnamon stick and a proper Béchemel sauce with plenty of freshly grated nutmeg. I did deviate a little by added a thin layer of grated Gruyère on top for the last ten minutes of baking (I bought several 200g blocks the other day for 26p each!).
                      Not being cocky or anything, but I'm pleased to say that it's one of my "signature" dishes!

                        I love Moussaka. I never thought I would until once on our jollies in Greece, and on one trip we were served it (no menu, just told we would stop for lunch at some tiny little nondescript place and that's what they gave us). Loved it, and had it several times since, though I've never attempted to make it myself.

                        @clueless1 - it's very easy. A little bit of pfaffing around but it's a pleasure to cook. Do go through all the rigmarole with the Aubergines as it stops it becoming sloppy. Use fresh nutmeg and cinnamon sticks, not powdered, and make sure that you have some allspice in too.
