What did you have for dinner?

    We were invited out to dinner at friends tonight but that didn't stop us having a cooked lunch :noidea: :)

    We needed to use up the chicken breast pieces that we had marinated in a Thai style marinade
    Marinade was freshly picked garlic, crushed, with olive oil, lime juice, chopped chillies, freshly sliced ginger, grated lemongrass and chopped coriander leaves. Put on skewers (wooden ones soaked in water first) and grilled.

    Mrs Shiney had this with freshly picked salad. I, not being keen on salad, ate mine on its own and then, half hour later, had a smoked salmon beigel (bagel is the American spelling and it's taking over :mad:).

    Our friends made home made tomato soup (tomatoes freshly picked, drizzled with olive oil and roasted with onion until they had caramelised) accompanied by home baked rolls. This was followed by roast chicken with new potatoes, mangetout, baby corn, courgettes, carrots and parsnips. Dessert was freshly picked plums in a crumble, and fresh pineapple, mango and bananas. Then a cheese board.

        Yesterday we had each,2 thick white slices of toast. Baked beans, tinned tomatoes, fried egg, fried potatoes, fried red onions with garlic and chilli. Hubby had 2 sausages, i don't.

        Today we had roast beef and yorkshire pudding with potatoes, peas, carrots, sprouts and cabbage.
        Followed by homemade Christmas pudding and tinned custard.

          Roast Chicken, roast spuds, roast carrots, asparagus and cabbage out of the garden (plenty left for bubble 'n' squeak tomorrow:snorky:

            As much as I love a roast the tradition has slipped, unfortunately. However if one is cooked you have to have enough left for bubble and squeak! yummy!!
            The kids had homemade minced beef pie, mash, veggies and gravy. We are now wondering what we are going to have:dunno:
            Yes we should all eat together and we do when possible, just couldn’t happen today.

              Yesterday we had a frugal lunch of a nectarine - one each :heehee:. Last night we had pea and mint soup, followed by mushroom, pecan and walnut wellington with veg and mash and a wine sauce, followed by summer pudding.

                  It's Friday night so family dinner by the table is off. Free snacking, preparing your own meal any time... or, as it often happens, a gathering of hungry people in the kitchen around 9pm.

                  This is my favourite dinner night, it can be anything from giant potful of popcorn with Monopoly via experimental sandwich at midnight to a formal and ambitious 5 course meal prepared together with giggles, ready around midnight :) Or just pancakes straight from the pan.

                  I think I'll lobby for "Monopoly and something" tonight. Potato wedges, finger veg, cheese and some nice olives whilst I crush my family in the game and leave them thousands of pounds in debt sounds quite nice :whistle:

                  Does anyone else have regular Irresponsible Eating Nights when anything is "allowed" at any time?

                    @Selleri at my house it was always called fend for yourself. Usually helps in not wasting leftovers.

                    Tonight I've had mixed vegetables, jelly candy, maple fudge, m&m's and a red wine spritzer. Still not sated so maybe I'll have some Christmas cake for dessert :)

                      Tonight we had Icli Kofta (spiced minced lamb dipped in a crushed couscous batter and fried to make a crispy coating) with houmous. This was followed by charcoal grilled marinated lamb pieces with rice and a salad of lettuce, red onion, parsley, finely sliced carrots, cucumber in a lemon and pomegranate dressing with powdered sumac mixed in.

                          Tonight is kofta curry, still, bubbling and finishing off and waiting for its coriander :thumbsup:
                          It will be served with plain basmati, I considered doing pilau but I really can't be bothered :heehee:
                          I used the lemon drops in it, they really do go yellow don't they! I love the heat and flavour :) thanks for the info @shiney. Grown chillies for years, never seen a yellow one! :)

                            What we had tonight was probably irresponsible if you're a cardiologist :heehee:
                            Pork belly which was marinated for 24 hours in;
                            • A can of Coca Cola
                            • A fair tonnage of garlic
                            • Some naga chilli paste (for flavour and aroma more than heat)
                            • Honey
                            • Smoked paprika
                            • A splash of rice wine vinegar
                            • Black treacle
                            • Star anise
                            • Fennel seeds
                            • Sesame oil
                            • Some salt
                            The whole lot was chucked into my tagine and cooked for two and a half hours. Sliced red pepper (the long thin ones), chunks of onion, lemon rind and matchsticks of ginger were added and gently folded in (very quickly) and it was put back in the oven for fifteen minutes. Served with sticky rice (jasmine) cooked with dessicated coconut.
                            All really unhealthy but oh so lovely!
