What did you have for dinner?

    For a "what's in the cupboard" meal it was ace!
    1] Dry fry some cummin and onion seeds then put to one side.
    2] Add oil and saute garlic and onion. Add a pinch of sugar, salt and a splash of red wine vinegar.
    3] Add tomato puree and sweat before adding some coriander powder and smoked paprika. Add chopped tomatoes (slightly squidgy cherry toms in this case), black treacle, scotch bonnets, the reserved seeds and some water.
    4] When it is simmering add sliced mushrooms (not peeled :heehee:) and red kidney beans and simmer for at least an hour due to the powdered ingredients. This is where my woodburner is so handy.
    5] When it is nicely thickened add chopped peppers (these may be added later if you want) and the tenderloin fillet (score it and roll it into the stew). Cook for 30 minutes, adding chopped coriander at the end.

      Sounds a good recipe. Do you ever add chocolate as they do in the very popular Mexican stew called Mole?

      I have made Mole - wasn't that keen to be honest.
      The basic mix bar the meat is a good base for wraps. I then add shredded leftovers from a roast to the mix. Fill a wrap with that, salad and cheese:yes:

        I've, also, not been so keen when I've cooked it but thought it tasted good when I had it in Mexico. :scratch:

          Saturday: Chicken legs pot roasted on a bed of dried fennel stalks, sliced lemon, bay leaf, a little garlic and a splash of white wine, some new potatoes and a large leafy green salad. Followed by some fine vintage cheddar, crackers, fresh figs and walnuts.

          The remaining pan juices from the chicken were reduced slightly and cooled to a jelly in the 'fridge and will be lunch today, spread on toasted bagels, tomato salad and a small beer.

            Later, a nice wadge of local, free range pork shoulder with leeks from Brittany that I brought home ,some pointed cabbage, roasted pots and snips. And some sage and onion stuffing with Maille wholegrain mustard seed mixed in it. Then a rhubarb and crystallised ginger crumble and very naughty creamwith a glass of Muscatel desert wine that we bought from a Cave just over the Spanish border. Only 3 euros for a litre - straight from the barrel into a plastic bottle,

                          tinned spaghetti hoops , chips , and two sausages with bread and butter , I havnt had that for years .....
