    hahhaha its a pork pie with a layer of chicken breast on top then a layer of sage and onion stuffing on top of that then the pastry:) @Spruce

                    Doing Thai pork with the last 1lb of the Christmas pork. It's very lean and much too good to waste. Even got sticky rice that we brought back from Thailand. Got all the gear at the ready for a bit later on,

                      8 chicken thighs (on the bone) browned in some olive oil and then removed from the pan.

                      2 large onions chopped in large chunks and 1" of finely sliced fresh ginger lightly browned in the oil

                      1 large clove of elephant garlic (just over 1" on each side) left whole and put in with the onions

                      2 medium carrots, 2 sticks of celery, 1 leek, 1 small pepper, cut into chunks and fried for five minutes

                      1 large courgette cut into chunks, 1 chopped chilli, 1 large handful of French beans cut into 1/2" pieces, a tin of Italian plum tomatoes (blitzed) and the browned chicken put into the pan and simmered for 5 minutes

                      1 cup of Sauvignon Blanc, 8oz mushrooms cut into quarters, 2 tsps. mixed dry herbs and 1 chicken stock cube added and left to simmer until the chicken is cooked.

                      Add more water/wine if required but the chicken and mushrooms should add enough liquid on their own.

                      Serve with either, rice, boiled new potatoes or mash or if you want a lighter meal don't serve with anything as there's enough vegetables in it.
