      grilled eggplant. saute tomatoes in butter and cream all over pasta with homemade pesto sauce on it.

        Last night I had vegetable lasagna, broad beans & potatoes (from the garden) carrots & peas...yum! :)

        with the Tomato season well upon us. I have this dinner weekly using fresh garden one.
        below is what I do with the Tomatoes, then make pasta and fold some pesto in the pasta then putting the tomato stuff on top. just love it.

        Melt the butter in a saute pan. Add the tomatoes, cut-side down. Poke their backsides a few times with the tip of a knife to prevent the skins from bursting. Cook 10 minutes. Flip, and cook 5 minutes on the other side, scattering over the thyme as you do so. Season the tomatoes with salt, and pepper, to taste. Pour over the cream, and cook until reduced to a thick sauce around the tomatoes, about 5 minutes depending on your heat. Serve.

                Spaghetti Squash (roasted first) then saute in olive oil and garlic with chicken sausages and garden fresh tomatoes.

                      image.jpg We had this on Tuesday (Shepherds Pie with minced Lamb)to which I added carrots,peas,mushrooms and onions topped with potatoes.The carrots,onions,and spuds were our own grown veggies.I also topped up Mr Kandys plate with home grown runner beans that we are still picking at the allotment.It was so nice and as we had some left we had the same again last evening which went down very well and for dessert Mr Kandy had home grown Conferance pears and I had Marjorys (sp) Seedling plums:smile:
