    my mum used to cook breast of lamb over scalloped potatoes and onions. its was GORGEOUS.....right me bellies rumbling now. whos making me a butty?

    Brawn:
    Half a pigs head..
    Remove the brains. ( to be fried and served on toast )
    Remove tongue. Boil until tender (Thinly sliced with salad)
    Whats left. throw in big pot and boil... simmer..simmer until all none bone stuff has been released from bones. Remove bones and leave to cool and set.
    Served cold sliced... yummy

    :D Tails and testicles were cut off with a knife,not rubber bands like today!...Tails were boiled to remove the fleece,dipped in batter then fried!:thumb: Only the men were allowed the other meats:confused:...Not treats,just that nothing was wasted:)

    Cotechino di Modena The first news of its existence goes back to 1500, more just to 1511 to Aiming it. It is diffused in 1700.     These days its mainly MDF dust.:D

    You guys just crack me up. A cotechino is all the above (the very last scraps of pork that do not qualify for anything else, ground to a past and stuffed into pork guts, or skin, I don´t know, either way it´s horrid), but mainly it is a boiled mass of disgusting jellied fat, tasting of pepper and rotten something that for some reason my region compatriots find delicious. I did eat and enjoy it as a child, but now yuuuuckkkk!!!!

    My mum wasa fantastic cook{pity she never passed her skills down to me}and I do miss her Apple and Blackberry Pies and Apple Pies with lashings of hot custard,Pip Pudding,Corned Beef and Potato Pie,Custard Tart made with a sweet pastry base then topped with thick custard and cooked in the oven until the custard had a nice brown cooked skin on top...yummy:p:cool:

    PS you can all keep your horrible sheep and pigs bits...Yuk:eek::D
