What's Cooking Today??

    With this heat, food is not a priority. Yesterday I had half a tomato, cheese and lettuce sandwich (with one slice of bread) and for dinner I had a cheese and onion lettuce sandwich (no bread). Today I will have Bran Flakes with cinnamon sugar for lunch and a tuna mayo lettuce sandwich for dinner. I also have a biscuit with tea (no sugar or milk) at 8 o'clock, a glass of juice at 9.30, a Greek yogurt at elevenses and a piece of fruit around 3pm. In the evening I have a few crisps or nuts and Rum and Diet Coke, I drink water throughout the day. I find it better to eat a little often.

    A lettuce sandwich is a nice leaf of Iceberg (the looser variety not the tight cabbage type) filled with cheese or tuna or whatever, ie, a replacement for bread and rolled up.

      Hi Upsydaisy, Yes like a Sausage Burger. I take the skins off, add some herbs, shape them in balls, flatten them with Flour and fry them.

        Dough is rising for egg bread dough, bread dough with Shineybrid peppers and dough for baguettes. The bread dough will be made into buns are to be used for lunches over the next few days.

        I've got fresh roma tomatoes from the garden to make bruschetta for tonight :)

Mainly Thai and Vietnamese cuisine this week for us. Just had lunch in Leeds, the Mrs had fresh spring rolls and Penang curry while I had, pad grapow.

                Mmmmm love crumpets!!! We have them quite often....well at least once a week!! :heehee:

                I have to laugh as it reminds me when our middle son's girlfriend informed me that she use to eat them straight from the packet as nobody informed her that they were suppose to be toasted!!! I never did find out who put her right, I would like to think our son did!!
                She's half French and half Italian and hadn't come across crumpets before until she came over here to work.
                This came out when we were helping them move from their rented apartment to their newly bought first house.
                Hubs and son had left on one of many trips taking their belongings over to their new property . She found 2 remaining crumpets in the cupboard and suggested we had a sneaky quick snack while they were gone ,but as their toaster had already departed to their new place we would have to eat them the way she use to!!! :roflol:
                Must say that it wasn't that bad actually, but still prefer them toasted :dbgrtmb:

                  Oven chips, 2 fried eggs and baked beans lovely.
                  Unfortunately i cook dinner all the year even when it's hot weather.

                    Just got in so a quick quiche and salad.

                    'Unfortunately' @Logan ???? If you feel that way then it's down to you to change your menu . We tend to have lighter meals in the summer that require minimal cooking.:biggrin: :dbgrtmb:

                        @Logan if I want oven fries when it is hot weather, I take my air fryer and plug it in to an outlet outside. Ditto for my single induction cooker. It's great boiling water for pasta outside and not heating up the kitchen any further. That is also why I like my sunoven. It works like an oven without any power. :)

                            In the winter we cook pasta and rice outside in the rice/ pasta cooker....hate a steamy kitchen..
                            We also BBQ lots of meat/ fish in the summer and eats lots of salad.

                              We do too ... for our LONG Summer. T'other Half went and got a home made hamburger for him for lunch and I requested just a cooked chicken breast and a fresh basked mini baguette. I had 1/3 of the chicken sliced in a crispy lettuce leaf with cucumber. The rest will be for ???? He got himself a piece of battered fish for tonight (re-heated/crisped for 2/3 minutes in the Air Fryer) and I will have two kippers. We will share the baguette with butter.

                                I don't have all of those gadgets just a pressure cooker and my lovely stand alone cooker that's doing well, nearly had it for 2 years this Christmas. Opps the naugty word.:biggrin::heehee:
