We had Christmas last night, slow roasted gammon, beetroots, tatties, carrot and leeks. It's a super easy dish, just chop the roots into tattie sized chunks, lay the gammon on top and roast under foil for 3-4 hours and then without foil until done. Nothing beats slow roasted beetroots :)

Blackberries technically 'cooking' today, but won't be eaten until over winter/spring, either for deserts or used in Mrs Scrungee's delicious apple (also 'canned') and blackberry cakes.

I will just add we have four Icelands here now and one mini Tesco. Iceland is called Overseas / Iceland / Waitrose run by Overseas.es by a British guy who owns umpteen in Spain and the islands and the four here in Algarve, all within 15-30 minutes of us. We have ever been to the Tesco, a half hour away.

Victoria there's nothing wrong in buying frozen foods.

When I worked at the Littlewoods store at Worcester. I used to cook the food for the cafeteria and we changed to the frozen foods instead of the cook and me making them up from scratch.
That way they could save money by only having one person doing it.
