I confess, I really enjoy it; not the healthiest thing in the world, but once in a while...

Mmm ,sounds good too Vicky .

Making me hungry for our supper, have to just eat the perishables that are lurking in our deceased fridge I think.

Yes we just used up the cheese , tomatoes and peppers to make a cheese toastie. Followed by kiwi and tangerines . We're just trying to eat the oldest or ripe items first.
Everything else should be fine .

                Dipherinoise ;) here this evening...

Our combi-microwave does the best dauphinoise potatoes I think I have had, and I quite often make them as an accompaniment to something else. This evening, however, I decided to change things up a bit.... (this serves 2, but can be adjusted/expanded as you see fit, just scale things up)

4 x good size potatoes, peeled and thinly sliced
1 x Matteson's Original Smoked Sausage, sliced relatively thinly
                4 x cloves of garlic, crushed/minced
Double cream (or you can use Elmlea) and semi skimmed milk to a rough 50/50 mix
                Cheddar cheese, grated (*)
                Parmesan cheese, grated (*)
Mixed herbs, salt and black pepper

(*) variable quantities as you like, depending on how cheesy you want it.

                Oil a pyrex casserole dish and pre-heat oven. (220Âșc & 400w microwave)
Mix cream, milk, salt, pepper and garlic - stir well.
Start with a layer of potato at the bottom of the dish, then add a layer of sausage, and a sprinkling of the mixed cheeses. Repeat until you've got everything in, preferably finishing with a layer of potato on the top. Pour over the mixture until everything is covered. Pop into the oven 25-40 mins (depending on amount made and your oven)

Variations: sliced onion could be added as a layer; cheese could be added on top but be aware of burning.

For dinner I am having fish fingers (they do nice whole fish ones here), a few chips in the air fryer along with onion rings.

For lunch I had home made Naga beef curry with rice.

Late tonight I shall have two freshly home baked petite pains with smoked salmon.

I had beets with some sour cream and for dessert, christmas cake. Then for lunch I had some ham and for dessert, some gingerbread men. I've got rolls rising so I guess supper will be a ham sandwich and more leftover desserts.
