      Was going to put this up Saturday, but ...

      This is something we know from America called Submarines...

      Rolls, French Bread, we use Papo Secos (Portuguese Bread Rolls baked daily)

      Portuguese Rolls (Papo Secos)

      Salami
      Mortadella / Bologne
      Cheese (Hambuger Slices best)
      Butter and Mustard or Horseradish

      Split Bread in half, Butter one half and put Mustard/Horseradish on other half. Put 2/3 slices of Salami. 2/3 slices of Mortadella/Bologne/Luncheon Meat and slice of Cheese. Put halves together and wrap in foil. Put in pre-heated oven or Air Fryer for 10-15 minutes. Eat hot or cold. You can do in batches and put foil-wrapped Rolls in a sandwich baggy and freeze till needed. You can cook from frozen.

            Slow-cooked venison joint with sauce grand veneur, potatoes and cabbage. I'd forgotten what tender but well-cooked meat tastes like. :wow: The bambis that are decimating my Euonymous better watch out. Unofficial shooting is not allowed, but there's no mention of bear-pit traps :whistle:

                I'm doing a lot of cooking for needy people at the moment - and for us. Yesterday I made a very large chicken thigh casserole with lots of onion, garlic, herbs, celery, carrots, courgettes, toms, mushrooms and big glugs of wine.

                Today I shall make a big pile of snacking chicken wings with garlic and herbs. Before that I have started off a big oxtail stew that will have onion, garlic, loads of root veggies, celery, leeks, herbs, another glug and possibly it touch of Worcestershire Sauce. I need to have it off the bone so, at the moment it is being simmered for a couple of hours (or more) before removing the bones and combining it with the braised veggies to finish off the veggie cooking. It will have a lot of spuds in it so the carers don't have to do anything apart from heat it.

                  Yesterday saw the first barbie of the year. :) Lamb steaks, chicken skewers, shallots, pepper, pre-boiled tatties and some mushrooms.

                  Rosemary (just seen behind) was multipurposed as kindling, marinade ingredient and for smoking. Perhaps it was a wee bit Rosemary overkill, if such a thing exists- but everything was lovely and it didn't even rain. :biggrin:

                    We had our 3rd BBQ of this year on Sat and had leftovers yesterday.

                    Today we had Chicken wraps with salad and sweet chilli sauce.

                      Most posh- brie, bacon and artichoke toasties with green salad with vinaigrette dressing on the side. Crispy white wine.

                      So the bacon is Tesco's cheapest and the Brie plus the artichokes from Lidl and the crispy white wine from a cheapy box, but very lush dinner anyways :)

                      Oh, did I mention organic fresh pea shoots to garnish? High life :biggrin: :heehee:

                          Pan seared salmon, marinated in lemon and very finely sliced ginger, and served with lots of buttered broccoli and lovely creamy mash done with lots of butter and mayonnaise. Followed by home made apple crumble (still have a freezer full of our apples - about 100 containers still to go :heehee:) with Greek yoghurt.

                              Blueberry pancakes this morning. Made some spicy chicken thighs yesterday, used sous vide/immersion heater for a few hours then roasted quickly in the oven to crisp the skin with mixed veg.
