    I to enjoy shiny mushroom soup but add cream in mine but I try a courgette in mine next time ,I eat them often in stews today I going to do a celery soup also a leek and potato soup

      Smoked for about 4 hours then finished in the oven. Beef rib was lovely, first time I've tried one cooked this way. I put the other two in the fridge last night and portioned them out this morning for freezing

        Hi that sounds delicious it brings back memories my dad used to smoke some foods one of his favorites was buy a bacon or meat joint smoke it about 4-6 hours then eat it.with Sauerkraut it was so tasty wonderful memories also he smoked freshwater fish as he enjoyed fishing

              Courgettes are brilliant for being cooked into soups that are going to be liquidised.

                Looks fantastic.

                I don't smoke meat (don't have a BBQ any more) but I do make a pretty good salt beef (used to do it professionally). The best cut of beef for salt beef is brisket.

                The best way to salt it is in brine with added spices and keep in the fridge for 7-10 days turning every two days. Most of the salt beef you buy in supermarkets is silverside or topside and, to keep the price down, it is usually brined in three days with the brine being injected into the meat to speed the process up.

                  Our lovely fish and chip shop is closed until 15 February. We have lots of others (on coast) but this one is worth waiting for.

                    I wonder how BBC Good Food magazine (we subscribe) would manage their favourite tip "make it vegan by..." :biggrin: (Usually by swapping real ingredients like Parmesan cheese for a vegan substitute or simply by leaving out any ingredient that is in the dish for flavour or consistency. )

                    Vegan dishes are great, but awkward swaps and superprocessed "lookalike" substitutes are not I think. Vegan "bacon"... really? I like my beans as beans thank you. And cooking or baking vegan is an obstacle course, vegetarian is much much easier and cheaper. Who remembers that honey is not vegan?

                    Ham & Camembert toasties with salad in the Selleri household today :thumbsup: We would wash it down with Prosecco but are unable to open the bottle :dunno:

                      You can get vegan sausages so why not bacon?

                      Back in the 70s there wasn't any of those substitutes around. My sister in law and my brother is vegetarian, she had to make dishes from scratch. I'm not vegetarian and i stayed there once and she made millet rissoles, but they were very tasty.

                      Today it's roast beef with jacket potatoes and all the veg with gravy.

                        But why do so many veg / vegan alternatives try to be a sausage or bacon etc? It seems counter to what they're trying to be.
                        Today is the first day of not having turkey since Christmas day...

                          Most of the time it's probably people starting to be a Veg or Vegan but don't really want to give up the meat so they have a lookalike, we tried to cut out having corned beef once a week but couldn't find anything that tasted good, eventually we did find a veg mince but they stopped producing it, so we went back to mince beef but a leaner one.

                          I tried veggie tuna once, I thought it was disgusting, I dont each much meat and find it annoying when I say that, and people say, oh you must be vegetarian then.:mad:

                          No, I'm not a veggie and I don't think I ever will be judging by the stuff they sell that is vegan or vegetarian, I just have a limited liking of meat products.
                          But I often get the impression that is not allowed when going to restaurants.:dunno:

                            We don't go to restaurants so wouldn't know. They say that go veggie or vegan to save the planet but i disagree. If i did i wouldn't buy those products, I'd do it from scratch but more time consuming.
