            Just made a big saucepan of chicken soup and am roasting a chicken with garlic and herbs, roast spuds, broccoli and followed by fresh mango and ice cream. We shall be taking some round to our 90 year old neighbour as well.

                      Classic Welsh fruitcake, all my Welsh relatives made them a couple of times a week back in the day. I did a gluten free one and it works fine too, often gluten free flour leaves a bit of a gritty texture but it doesn't seem to in this. IMG_20240118_203335.jpg
