                  Slow cooking a lamb leg over a tomato concoction.

                  Lamb was rubbed with pepper, oregano, marjoram and plenty of salt yesterday. Then placed above in the oven chopped up carrot, onion, loads of garlic and a pot of homemade passata from last year I found in the freezer. Also stock, wine, powdered mushrooms and more herbs and fish sauce. Cooking at 120c until it hits temperature then I'll remove it, put the oven right up, roast tatties and give it a final 20mins to brown.

                    Nice looking leg @Hanglow . Love herby lamb.

                    Here it's roast belly pork as it's the only French cut with skin for crackling, cooked on a bed of sliced onions and apple in cider which will be blitzed to make the gravy. I have whole carrots baking in a dish below with butter, chipotle, honey and a bit of water and there'll be proper roast spuds and some broccoli.

                      @Obelix-Vendée I get around the lack of crackling by buying joints during the foire de porc promos at Leclerc when they also sell packs of couenne (slabs of fat with skin on). With some of the fat removed, scored and laid over a loin joint, it hits the spot :)

                              The annual gingerbread madness is completed, various jars filled for gifting and a slight tummy ache after liberal sampling. :biggrin:

                              I love the tiny boys. They need to be pushed out from the cutter with a stick so mine look like they have had extensive heart surgery.
