    @Tui34 … these are the responses I’ve had so far (it’s only a small board). Scullion has been baking with sourdough for years and often tries different recipes … adding her own tweaks.

    The posts are on the public part of the board so you should be able to see them, but if you can’t just let me know

      Thank you @Dovefromabove and @Obelix-Vendée I use T65 organic white flour and have been baking sourdough using half white and half rye. Or. Half white and half wholemeal. Still to get the hang of the proving method. No salt. No sugar. No oil. It tastes all right but the crumb is a bit dense. So I use it for toast. Needs (im)proving. :yahoo:

      Thank you for the leads to Mary Berry and Paul Hollywood and I'll check out the foodie site, thank you DAB. And I'll let you know how I get on.

      Bucketing down here. The sheep and goat farmers will be out doing a rain dance, I'm sure!!

            @Tui34 I’ve been a member for so long … 20+ years maybe? I don’t remember the signing up procedure … but most threads should be visible to non members. Problem is I’m permanently signed in so any link I post might ask you to do the same …

            the croissants that i made were sourdough rather than normal yeast and were really good. you could;d call it an enriched dough as there was milk and water in it and a huge amount of butter (a bit in the dough and masses in the laminations).
            you just have to start earlier than you think by making the levain the night before so it's really active when you start, then shape the buns and leave in a cool place overnight to prove enough before baking (at the moment i'm using an unheated north facing room rather than the fridge).

              Tuesday . 44 degrees here, 9Am.
              sipping on my coffee.
              Today is Chess Club meet up, and later today is Trivia group meet up, brain power today. In between, probably house stuff, and stacking up bags or boxes to take with on our journey. Thank goodness we have a SUV. Maybe one day I'll get smart enough to leave some clothes down there, and which ones that is I want to leave and not miss.

              As far as baking for Easter, really don't do much of it, as the tall skinny husband really won't eat much of it. So this Friday will get to the bakery to see what treat he made to buy a little of. There is also plenty of Amish about with baked goods.

                Been to SM this morning, got quite a few packs of Hot cross buns......not a normal type though....and on offer with SM loyalty card. Some are now in the freezer. Yum yum :)

                  Good afternoon all,

                  It’s turned into a pleasant day here, especially as that chilly breeze has gone.
                  Been to town to do a little shopping and now it’s sandwich time.

                  I like hot cross buns. I’ve made them in the past, but find them a bit on the heavy side, so tend to buy them. I think this year, though, I’ll make a hot cross loaf in the bread maker and see how that goes. I made a Simnel cake on Sunday so will put the marzipan on top on Thursday and the marzipan “eggs” to represent the disciples.

                    OH has been eating hot cross buns all year, so I’ve usually got a pack from the supermarket in the freezer. On Good Friday in Sidmouth, there is an annual distribution of hot cross buns to the local children, who queue up near the seafront. Made the mistake of going in early one Good Friday, expecting the place to be peaceful and quiet, but the whole place was packed out.
                    I love the idea of traditional baked goods made by your local Amish, @redstar. Or do they use commercial additives like everyone else?
                    There was a glimpse of sun this morning, so we headed down to the coast, only to get rained on halfway there. However, it cleared up really quickly, so we had a fantastic walk along the seafront, then along the riverbank, in glorious sunshine. I even had to shed one of my many layers!
                    Hope the poorly recover quickly, in time to enjoy Easter.

                      We had a long and leisurely lunch with the walking club. Only 22€ for 3 courses, wine and coffee. My tummy now feels like a balloon. There were 25 of us, all English. Apparently there is a French walking club in this area but they are 10 - 20 years younger than us and walk twice as far.

                      The walk was cancelled because of tipping rain, but everyone enjoyed the lunch. Someone suggested turning it into a luncheon club!

                            @Busy-Lizzie, I'll bet that you are doubly pleased that you didn't go on the walk today but it does sound a nice idea - your luncheon club. Something similar to my Quiz Team meals once a month - on the first Friday. I am not sure why your labels wouldn't have shown up on your pictures but if you contact one of the Admin staff I'm sure that they will be able to offer some good advice.

                            Our visitors left about an hour ago, they are cat sitting near Oxford for their son and his wife.
                            I bought far too much food in the S/M as usual for lunch so we plan to eat up the cold meats, cheeses and salad stuff for dinner again tonight - will save cooking - hurrah.
                            I called in at our local bakery and have pre-ordered my Hot Cross Buns, I had to buy two packets though in case my daughter comes to stay. The bakery is opening on Good Friday to my surprise.
                            Glad your luncheon meeting went well @Busy-Lizzie - minus the walk, don't blame you if it was raining that hard. We, too, are feeling stuffed after our lunch so chilling out on the sofa with the papers.
                            You make me feel quite envious @Ergates living so near the sea. I love the idea of the schoolchildren queuing up for their Hot Cross Buns - does the local bakery donate them or do the parents have to pay?
                            Enjoy your trip @redstar and keep us posted on your travels.
                            Afraid it's not good news about my poorly brother, he's being moved into a hospice soon for end of life care, his wife can no longer cope with 24 hour care on her own. The promised care 4 x daily hasn't yet materialised. (I'm so sorry if this info is upsetting/triggering to anybody on the forum, please let me know by a PM if so and I'll stop posting updates.) I do so because former GW and now GC friends have been of great comfort to me during the last year or so as I hope I have been through their own tough times.

                              It’s my mid-week weekend now, as off from now until Thursday :dbgrtmb:

                              It’s lovely to see how chatty everyone is. I don’t know about the other new members, but I feel that Gardener’s Corner is a little gem and I look forward to calling in after a busy work day to see what’s what.

                              I’ve never made hot cross buns, but have more than made up for that by eating them. The chocolate chip and orange ones are my favourite. I sometimes make a bread and butter pudding with hot cross buns (or even just fruit bread) and I recommend that! Have you seen the ones with a ‘tick’ rather than a cross on them?!?! World gone mad!
