@Snorky85 It's good that you've got your enthusiasm back. I love my food and cooking. That menu is fairly simple. The important thing about it is to have things organised in your mind.

Soup and desserts made in advance. Roast chicken and spuds - easy. Rice - fry a load of chopped onions in hot oil with some cloves dropped in first for ten seconds and once the onions are in add some pieces of cinnamon stick and torn up bay leaves. When the onion is softened throw in the washed rice, as some boiling water, a chicken stock cube (chopped, otherwise it may get stuck to the rice), a squirt of tomato paste, teaspoon of turmeric and a teaspoon of curry powder or curry paste. Cover and cook very slowly until rice is done - stir occasionally to stop sticking.

Stir fry veg easy if you have all the veg prepped in advance. I'll have each one trimmed and sliced in advance (carrots and courgettes sliced thinly and at an angle, so that each slice is long and oval instead of round - just looks fancier with no extra trouble). The french beans will be chopped and blanched and the water from blanching will be used for the veggie stock granules. Stir frying takes a max of ten minutes - whilst chicken is resting.

The forecast for today is fairly good so I hope to get some work done out there. It's 45F out there at the moment but feels a lot colder. As it's dark out I put the outside lights on and swept the leaves off the patio. It took a bit longer than I hoped as my furry friend decided to help. Back indoors at 5.30 a.m. and had a hot drink.

We have our gardener coming today to do some more of the heavy work and someone coming to clean our oven. It needs a professional clean every couple of years.

Between the gardener and myself we got a lot done yesterday. I'm just waiting for it to get a bit lighter outside before I carry on with the pressure hosing.
